How do you do you know if souffle is done?
The best way to tell if the soufflé is cooked through and ready is to stick a kitchen needle into the middle. If it comes out totally clean then you can take them out, if it doesn't then leave in for a further 2-3 minutes.
INGREDIENTS
125 g plain chocolate 2 tbsp. water 300 ml milk 45 g butter 45 g plain flour 2–3 drops of vanilla extract 60 g caster sugar
DIRECTIONS
Break the chocolate into pieces and put into a small saucepan with the measured water and a few tablespoons of the milk. Heat gently, stirring, until the chocolate has melted. Add the remaining milk, stirring to blend. Melt the butter in a pan, add the flour, and cook, stirring, for one minute. Remove from the heat and gradually add the chocolate and milk mixture. Bring to a boil, stirring, until the sauce has thickened. Stir in the vanilla extract and caster sugar, and leave to cool.
